- 2 cups kale, chopped
- 1 cup shredded carrots
- 1 cucumber, thinly sliced
- 1 red bell pepper, diced
- ½ cup tahini
- 1 cup plain yogurt (dairy or dairy-free)
- Juice of ½ lemon
- 2 tbsp extra virgin olive oil
- 1 tsp turmeric
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water and combine it with water in a medium saucepan. Bring to a boil, then reduce heat to low and cover. Cook for about 15 minutes until fluffy.
- While quinoa cooks, massage chopped kale with olive oil until tender. Prepare shredded carrots, diced cucumber, and red bell pepper.
- In a bowl, mix tahini, yogurt, and lemon juice until creamy.
