  • 2 cups almond flour
  • 1 cup granulated sugar
  • 3 large egg whites (room temperature)
  • 1 cup powdered sugar (for dusting)
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/4 tsp salt
  • 1/4 cup sliced almonds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, mix almond flour, granulated sugar, salt, vanilla extract, and almond extract until well combined.
  3. In another bowl, whip egg whites until soft peaks form.
  4. Gently fold the whipped egg whites into the dry mixture until just combined.
  5. Drop tablespoons of dough onto prepared baking sheets, spacing them about two inches apart. Optionally sprinkle sliced almonds on top.
  6. Bake for 15-18 minutes or until edges are lightly golden but centers remain soft.
  7. Dust with powdered sugar after cooling slightly and enjoy!
