  • 1 cup seasoned breadcrumbs

Instructions

  1. If using fresh potatoes, peel and boil until fork-tender. Drain and mash until smooth.
  2. Mix in shredded cheddar, chopped green onions, salt, and pepper until well combined.
  3. Scoop out portions of the mixture and roll into golf ball-sized balls.
  4. Dip each ball into beaten eggs then coat with breadcrumbs.
  5. Preheat air fryer to 375°F (190°C). Place potato balls in the basket without overcrowding.
