  • 1 lb boneless, skinless chicken breasts, diced
  • 2 cloves fresh garlic, minced
  • 3 green onions, thinly sliced
  • 1 cup water chestnuts, chopped
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 8 large lettuce leaves (Bibb or Boston)

Instructions

  1. Heat oil in a skillet over medium heat and sauté minced garlic and sliced green onions for 1 minute until fragrant.
  2. Add diced chicken and cook until browned and no longer pink (about 5 minutes), stirring occasionally.
  3. Stir in chopped water chestnuts, soy sauce, hoisin sauce, and rice vinegar; cook for an additional 2 minutes until heated through.
  4. While the filling cooks, wash and dry the lettuce leaves to use as cups.
  5. Spoon the filling into each lettuce cup and serve immediately.
